Is it possible to include a line item on an invoice, but hide it from
displaying when printed?

The reason: We include the cost for equipment with jobs that we
perform, but do not want to show this to the customer. So we roll the
cost of the equipment into our labor item. The only problem is that
we do not tax for equipment, whereas we do for labor. And when we
roll the equipment into the labor, QuickBooks automatically applies
tax to the whole line item.

Thanks in advance,

See QB Help for Group Items. You can hide the items in a group.

Preferences>Sales and Customers

Check the box for "Don't print items with zero amounts"

This enables you to bill for an agreed amount, but decrement stock
items you may have used in the job.
