My local bank, Carolina National, recently merged with First National,
and I'm now having problems downloading my statements. Quicken does
not recognize First National and wants to create a new account. I am
unable to edit the existing account to change the name of the
Financial Institution; it is grayed out.
What is the best solution here?

Have you disabled the account from on-line? On the overview for the
account, go to 'Change online services', then 'remove connection'. The
next time you download, any accounts not already tied to something
online should show up in the list of available accounts.
